[שֶׁ֫מֶר] noun masculine Isaiah 25:6 only plural lees, dregs (figurative); — absolute שְׁמָרִים Isaiah 25:6 (twice in verse) (in both = wine matured by resting undisturbed on the lees); suffix שֹׁקֵט הוּא אֶלשְֿׁמָרָיו Jeremiah 48:11 (of Moab's undisturbed life), compare (of careless men) הַקֹּפְאִים עַלֿשִׁמְרֵיהֶם Zephaniah 1:12; שְׁמָרֶיהָ Psalm 75:9 (of ׳י s cup of judgment). 1. שֶׂ֫מֶר

Gesenius' Hebrew and Chaldee Definition

שֶׁמֶר only pl. שְׁמָרִים m. dregs (of wine), so called because, when wine is kept on the lees, its strength and colour are preserved. קָפָא עַל שְׁמָרָיו, שָׁקַט Jeremiah 48:11; Zephaniah 1:12, to be settled on one’s lees, to lead a quiet and tranquil life; a metaphor taken from wine, Isaiah 25:6, שְׁמָרִים מְזֻקָּקִים “lees racked off,” i.e. old and most excellent wine afterwards purified from the lees.
